Chocolate Buckwheat Granola
This is one of my favorite recipes lately. It’s perfectly paired with dairy-free milk, on top of berries + yogurt (coconut or sheep’s) or on its own. ️

High in Fibre
Ingredients:
2 cups of rolled oats
2 cups of buckwheat groats
1 ½ cups large coconut flakes
1 cup of mixed nuts and seeds (I used pumpkin seeds, walnuts+ hazelnuts)
¼ cup flax
2 tbs of hemp hearts
1/2 tsp sea salt
¼ cup coconut sugar
1/3 cup of maple syrup @rainbomushrooms
1/3 cup coconut oil
½ cup cacao powder
Directions:
1. Preheat oven to 350°F
2. In a large bowl combine oats, buckwheat, coconut flakes and coconut sugar. Chop nuts/seeds and add them in.
3. In a small saucepan over low-medium heat, melt coconut oil. Add maple syrup, salt and cocoa powder. Whisk to combine until smooth.
2. Pour liquid ingredients over dry mix.
3. Spread mixture out in an even layer on a lined baking sheet and Bake for 15-20 minutes. Remove from oven, flip granola in large chunks, and place back in oven to bake for another 10 minutes, stirring every 3-4 minutes. Allow to cool for 15 mins.
